Lugya'h: Zapotec tlayudas with a Michelin Bib in West Adams

Alfonso "Poncho" Martinez and Odilia Romero turned their tlayuda pop-up into a counter at the new Maydan Market, and the Michelin Guide named it a Bib Gourmand in its first year.

Lugya'h is a counter inside Maydan Market, the 10,000-square-foot food hall that opened on Jefferson Boulevard in fall 2025 around a shared live-fire hearth. It is the first brick-and-mortar for chef Alfonso "Poncho" Martinez, who runs it with Odilia Romero. Their pop-up made Martinez a James Beard semifinalist for Best Chef: California in 2024. In June 2026, in its first year, the Michelin Guide named Lugya'h a Bib Gourmand.

The name is Zapotec, roughly "the face and heart of the plaza."

What to order

  • A wood-grilled tlayuda. It is big enough to share.
  • House-made moronga.
  • Turkey mole.
  • Tamales steamed in banana leaf.

How to get in

  • Maydan Market is open Tuesday to Sunday, 11am to 4pm and 5pm to 10pm.
  • The market's reservations are for Maydan, Rose Previte's restaurant that anchors the hall.
  • Counters inside the market can keep their own hours, so check before you make the trip.
